Browsing my way through a Nestle’ cookbook today, I spotted these ‘little guys’ (as my youngest son would say) as White Chip-Orange Cookies. I tweaked them a little for our taste and I couldn’t help but add dried cranberries. I like oatmeal cookies with white chips and dried cranberries, but the buttery-orange flavor and ‘melt-in-your-mouth’ texture make these a whole different cookie! Hope you enjoy!!
Orange-White Chip-Cranberry Butter Cookies
(adapted from Nestle’)
2 1/4 c. all-purpose flour
3/4 t. baking soda
1/2 t. salt
1 c. butter, softened
1/2 c. granulated sugar
1/2 c. light brown sugar
1 egg
1 t. vanilla
2 to 3 tsp. grated orange peel
1 c. white chocolate chips
1/4 c. dried cranberries
Combine flour, baking soda and salt in a bowl and whisk together. Beat butter and sugars in a mixing bowl until creamy. Add vanilla, orange peel and egg and mix well. Gradually add flour mixture. Stir in white chips and dried cranberries. Place by rounded tablespoons on an ungreased cookie sheet
Bake about 11 minutes or until the edges are light golden brown. Cool for 2 minutes on baking sheet, then transfer to a cooling rack. Makes about 24 cookies.
